If you would like to make a more sub­stan­tial snack ( maybe to take with you on a New Year’s Day walk on the beach) make dou­ble the quan­tity of fill­ing and a batch of shortcrust pas­try us­ing 500g plain flour, pinch of salt, 125g but­ter, 125g lard and ap­prox­i­mately 50ml wa­ter.

Roll the pas­try into six rounds and di­vide the fill­ing be­tween them. Brush the edges with beaten egg, then fold the pas­try over the fill­ing and crimp the edges to seal.

Brush the pasties all over with beaten egg and bake in a pre-heated oven at 180C (160C fan/gas mark four) for ap­prox­i­mately 30 min­utes un­til golden brown and pip­ing hot.
