Grilled nectarine with vanilla Bircher
150g low-fat Greek yogurt ¼ teaspoon stevia 1 teaspoon vanilla paste 4 tablespoons skimmed milk 2 tablespoons oat bran 1 ripe nectarine, stoned 5 macadamia nuts, toasted mint sprig, to garnish Mix together the yogurt, stevia, vanilla paste, milk and oat bran in a bowl. Leave to soak overnight in the fridge.
Cut the nectarine in half or into slices and grill or griddle it until caramelised.
Serve the vanilla bircher topped with the warm nectarine and toasted macadamia nuts and garnished with a mint sprig.
