Mackerel and apple crostini
½ x 268g pack peppered mackerel fillets
50g cream cheese juice of half a lemon, plus extra for the apple 1 tablespoon creamed horseradish salt and black pepper ½ green apple, sliced and cut into matchsticks 20 ready-made crostini (we used Crosta & Mollica chilli flavour) Put the mackerel, cream cheese, lemon juice, horseradish and a little seasoning into a food processer. Blitz until smooth.
Toss the apple in the remaining lemon juice. Spread the mackerel pâté on top of the crostini and serve with the apple matchsticks scattered on top.
