Preheat the oven to 220°C/fan 200°C/gas 7). Line 2 baking trays with non-stick baking paper.
Peel and slice 500g Maris Piper potatoes into 5mm-thick chips. Place them in a medium bowl with 1 tbsp extra-virgin olive oil and sprinkle with sea salt flakes. Toss to combine, using tongs, then spread the chips out on the prepared trays. Bake for 20 minutes or until crispy and golden. Remove the chips from the oven and serve.
