Pre­heat the oven to 220°C/fan 200°C/gas 7). Line 2 bak­ing trays with non-stick bak­ing paper.

Peel and slice 500g Maris Piper pota­toes into 5mm-thick chips. Place them in a medium bowl with 1 tbsp ex­tra-vir­gin olive oil and sprin­kle with sea salt flakes. Toss to com­bine, us­ing tongs, then spread the chips out on the pre­pared trays. Bake for 20 min­utes or un­til crispy and golden. Re­move the chips from the oven and serve.
