Green glow overnight oats

Serves 2

* 150g jumbo rolled oats

* 50g co­conut chips or des­ic­cated co­conut * 50g cur­rants

* 40g pump­kin seeds

* 40g sun­flower seeds

* 2tsp matcha pow­der

* 440ml ve­gan milk of your choice, plus ex­tra to loosen

* 2tbsp maple syrup * Blue­ber­ries, to serve

Com­bine all the dry in­gre­di­ents in a mix­ing bowl. Pour over the milk, cover and re­frig­er­ate overnight, or for at least four hours. In the morn­ing, add the maple syrup and some more milk to help loosen the mix­ture. En­joy topped with blue­ber­ries.
