Sweet mango and turmeric porridge bowl
* 150g rolled oats
* 1tsp ground turmeric * 1tsp ground cinnamon * 480ml oat milk or milk of your choice
* 3tbsp maple syrup
* 1tbsp freshly squeezed lemon juice
* ½ mango, peeled, stoned and cut into long wedges
* Pulp from 1 passion fruit * 5–6 macadamia nuts or nuts of your choice, roughly chopped Add the oats, turmeric and cinnamon to a small saucepan, stir to combine, then add the milk and maple syrup.
Place the pan over a medium heat and slowly bring to a steady simmer, then simmer for 3–4 minutes, stirring occasionally. Once the oats are tender and cooked, remove from the heat and add the lemon juice.
Stir to combine, then divide between two breakfast bowls.
To serve, top the porridge with the mango wedges and passion fruit pulp, plus a sprinkle of chopped nuts.
