Sweet mango and turmeric por­ridge bowl

Serves 2

* 150g rolled oats

* 1tsp ground turmeric * 1tsp ground cin­na­mon * 480ml oat milk or milk of your choice

* 3tbsp maple syrup

* 1tbsp freshly squeezed lemon juice

* ½ mango, peeled, stoned and cut into long wedges

* Pulp from 1 pas­sion fruit * 5–6 macadamia nuts or nuts of your choice, roughly chopped Add the oats, turmeric and cin­na­mon to a small saucepan, stir to com­bine, then add the milk and maple syrup.

Place the pan over a medium heat and slowly bring to a steady sim­mer, then sim­mer for 3–4 min­utes, stir­ring oc­ca­sion­ally. Once the oats are ten­der and cooked, re­move from the heat and add the lemon juice.

Stir to com­bine, then di­vide be­tween two break­fast bowls.

To serve, top the por­ridge with the mango wedges and pas­sion fruit pulp, plus a sprin­kle of chopped nuts.
