• Gen­er­ous cup (1 oz/50g) ground blanched al­monds

• Gen­er­ous cup (1 oz/50g) cake flour • Zest of un­waxed orange • Zest of un­waxed lemon

• 3 ta­ble­spoons plus one tea­spoon (50g) but­ter

• 8 oz (240g) diced can­died orange peel
