Restaurant couple think small to make big changes

A COUPLE have added some Spanish flavour to Bollington’s dining scene by relaunchin­g their business as a tapasinspi­red restaurant and wine bar.

Scott Oliver, 28, and Jaydean, 26, ran Oliver at Bollington Green on High Street as a fine dining restaurant from 2011 but a couple of years ago started thinking about changing the business to serve tapas-inspired small plates instead.

The couple, who live at Lowerhouse, Bollington, got to work on a refurbishm­ent and have relaunched as TAPA Small Plates and Wine Bar.

Scott said Bollington’s diners have welcomed the new-look restaurant with open arms.

He said: “So far it’s gone off the scale. The positivity for the idea has been overwhelmi­ng and hasn’t quite sunk in yet.

“We’ve taken it from large dinner plates and formal dining to small plates which can be eaten yourself or shared, making it much more social.

“We’ve replaced all the old, dark furniture and flooring with lighter, more modern but down to earth and relaxed stuff. All our tables are handmade, reclaimed oak, the bar is made from rough sawn timber and touches like crates on the walls and wood effect flooring make the place so much more appealing.”

The couple met working at a hotel in Leeds, where Jaydean is from, after Scott moved there from Stockport for work aged 17.

Scott said: “Jaydean is still at the helm out front, providing the same outstandin­g quality service you’d expect.

“We feel that this is the best thing we could have done for the business and we’re really looking forward to the future of TAPA.

“We want to say a huge thanks to everyone supporting us in this move and to everyone who has helped us get here.”
