Name: Thanyaluk Sisang (Mee). Which restaurant do you work at?: Chilli Banana Thai Restaurant, The Merchants House, Buxton Road, Macclesfield. How long have you worked there for?: 11 years. What do you enjoy the most about doing this?: am passionate about my job. I love cooking and I enjoy it when I receive compliments about my cooking.
IHow would you describe your style of cooking?: I need to be organised, especially on our busier weekend nights when we also may need to make a large number of takeaways. My role in our kitchen is to prepare and then be ready to make our soups, curries, fish and salad dishes from our menu. Do you have a signature dish or favourite dish to make?: Nua Sawan – ‘Heavenly Beef’ (this dish lives up to its name!). Do you have a favourite ingredient?: There are so many interesting fresh ingredients associated with Thai food. I find it hard to pick just one. Fresh green peppercorns, garlic and ginger are just a few. What is the best thing about Macclesfield?: It’s a friendly town and the countryside/hills are not far away. What is the worst thing about Macclesfield?: It gets very cold in the winter. In Thailand it’s warm all year round! Most memorable moment while doing this?: There have been many memorable times over the last 11 years but I do love our staff trips away each summer. We’re just one big family. If money was no object I would?: Buy a bigger house in Thailand! My biggest inspiration has been?: My older sister who also works at the restaurant with me. If you could have anyone visit your restaurant, who would it be?: Pierce Brosnan dressed as 007! If you could offer one piece of advice to anyone looking to break into your industry, what would it be?: It’s very important to really care about what you’re making/cooking. Make sure it’s delicious mouthwatering food for your customers and then they will come back!
