Couple aiming to serve up success as chippy reopens

- ALEX SCAPENS

ACHIP shop has reopened after being shut for more than a year after a couple changed country and careers to take it on.

Oliver Colclough and Becky Foster, 32 and 27, are the owners of the Chippy at Broken Cross, Macclesfield, which had been closed for around 18 months.

Neither has previously worked in any form of catering and had to go on a course at the School of Frying Excellence.

And until this year both had been earning a living in the skiing industry, in Canada, before returning home to look for a new business opportunity.

Oliver who has also worked in IT and as a gardener, said: “We had no experience so went on an intensive course.

“It was just something different and the excitement of a new challenge is all consuming.

“We worked together in Canada and thought let’s have a go.

“We looked at a few businesses and chip shop was number two on the list of top 10 start up ideas. The first was a microbrewery but there are already plenty of those.”

The couple, who live in Marple, returned from Canada in May.

They opened up on October 9 with little fanfare but say customers were some coming through the door of what is a ‘Broken Cross landmark’.

Currently they have a team of six staff and open Tuesday to Saturday.

Oliver added: “It has gone amazingly well, we didn’t tell anyone we were open but word got round.

“The biggest challenge so far has been cleaning the place and getting it right after it had been shut for 18 months.”

Becky added: “With the large focus of reducing plastic and waste being a headline in the public domain, we have attempted to reduce the amount of plastic trays and bags in our packaging wherever we can.”
