Sean aims to add flair to top hotel menu

A TALENTED executive chef who trained in Macclesfie­ld has been appointed at a Derbyshire hotel on the outskirts of the Peak District.

Sean Sutton joins the team at Buxton Crescent Hotel, a spa hotel sitting within a stunning Grade I listed building.

Sean trained at Macclesfie­ld College and spent 14 years training under celebrated chef,

Chris Holland, before working his way up to head chef.

He has since worked for five years as regional executive chef for the Abode Hotels Group.

The hotel, which features 81 bedrooms and 80 covers in the restaurant, offers a culinary experience from around the British Isles using seasonal British ingredient­s.

Dishes range from fresh fish and shellfish, beef and lamb, vegetarian dishes, desserts and artisan cheese and a varied internatio­nal wine list.

Speaking on joining the team, Sean said: “I am excited to join the team at Buxton Crescent Hotel, where we have our pick of fantastic ingredient­s and great producers.

“I’m planning to bring my creative flair and eye for detail to our menus and to create a real destinatio­n for food lovers.”

Lewis Howe, director of sales for Buxton Crescent Hotel, added: “We’re thrilled to welcome Sean to head up our kitchen, where he’ll bring his wealth of experience.

“We’re looking forward to a new direction in our menus, but with a focus on staying true to our heritage and offering local, seasonal dishes with Sean’s finesse.”

Sean added that he is keen for diners to try out some of his dishes in particular.

The acclaimed chef recommends the oak-smoked venison carpaccio, milk-poached skrei cod, truffle wild mushroom risotto and rum-poached pineapple.
