MALTY MOON CUSTARD BISCUITS (makes about 20)

INGREDIENT­S

200g plain flour, plus a lit tle extra for dusting 50g custard powder 50g malted drink powder, such as Horlicks 25g icing sugar 175g unsalted butter, cut into cubes 50g unsalted butter, soft 150g icing sugar 1tbsp custard powder 1tbsp malted drink powder 1 tbsp full-fat milk 2 baking trays Non-stick baking parchment Food processor Cling Film Mixing bowl Wooden spoon (or an electric hand-held mixer) Sieve Rolling pin Moon-shaped cutter (or another shape if you prefer) Cooling rack Teaspoon

METHOD

1. Preheat the oven to 180˚C/160˚C fan/gas mark 4. Line two baking trays with non-stick baking parchment. 2. Put the flour, custard powder, malted drink powder and icing sugar in a food processor and pulse. Add the butter and pulse again until it forms a dough. 3. Ask an adult to remove the blade from the processor and bring the dough together with your hands. Flatten into a disc, wrap in cling film and chill in the fridge for 15–20 minutes. 4. Now make the filling. Beat the butter until soft, then sift the icing sugar, custard powder and malted drink powder into the bowl and beat again. Add the milk and beat until you have a smooth but slightly stiff mix. 5. Take the chilled dough out of the fridge, unwrap and divide it in half. Lightly dust your worktop with flour and roll out one half of the dough until just thicker than a pound coin. 6. Use your cookie cutter to cut out your shapes and put them on the lined baking tray. Put in the fridge while you roll out the other half of the dough to keep it chilled.

When you have cut out and laid the second half of the biscuits on your other baking tray, put them in the fridge for five minutes. 7. Ask an adult to help you put the baking trays in the oven and bake for 8-10 minutes until biscuits are a pale golden colour. Place on a wire rack to cool. 8. When completely cool, use a teaspoon to put a little dollop of icing on one of your biscuits, then place another biscuit on top, like a sandwich. Repeat until you have used up all the biscuits. STORAGE■: Store i n an air t ight container and eat within five days.
