GRILLED VEGGIE SANDWICH

INGREDIENT­S:

4 English muffins, split and toasted

1 avocado, mashed

1 cup alfalfa sprouts

1 small tomato, chopped

1 small sweet onion, chopped 4tbsps ranch-style salad dressing

4tbsps toasted sesame seeds

1 cup shredded Cheddar cheese

METHOD:

1. Preheat oven grill. 2. Place each muffin openfaced on a baking tray.

3. Spread each half with mashed avocado; place halves close together.

4. Distributi­ng ingredient­s evenly, cover each half with sprouts, tomatoes, onion, dressing, sesame seeds and cheese.

5. Place under grill for about five minutes, or until cheese is melted and bubbly.
