chef with two restaurant­s in Manchester has issued a searingly honest apology after one of his eateries was given a one-star hygiene rating.

Health inspectors who visited Gary Usher’s bistro the Burnt Truffle, in Heswall on The Wirral, discovered a mouldy freezer emitting a ‘foul smell’.

Usher was the star of The Rebel Chef: My Restaurant Revolution on Channel 4 last year, which followed him opening latest restaurant, Pinion.

Usher also has Hispi in Didsbury and Kala in Manchester city centre. But the Burnt Truffle was given a one-star rating by council food inspectors.

Now Usher has tweeted a response written by himself in which he says: “This is not written by a PR company & I haven’t had advice on media damage limitation­s. I wrote this. This is me trying to protect my business in the same way I’ve grown it. With honesty. Once again I’m sorry to every one I’ve let down.”

He said the restaurant had a routine inspection by environmen­tal health inspectors in December adding the major concern was an incomplete Food Safety Manual. He posted: “Ours was only half filled in. Without it being filled in properly it understand­ably gave the Environmen­tal Health Officer cause for concern.

“The photos and details of the report show neglect on my part. As the owner of Burnt Truffle it is my responsibi­lity to create and maintain a non hazardous environmen­t. I clearly failed to do so. The images and details do not make me proud.”

He has paid for a reinspecti­on of the restaurant and says ‘every single detail has now been rectified’.
