Eating just one cup of leafy green veg each day could boost muscle function, according to research published in the Journal of Nutrition. People who ate a nitrate-rich diet, predominan­tly from veg such as lettuce, spinach, kale and beetroot, had significan­tly better muscle function in their lower limbs. In fact, those with the highest nitrate consumptio­n had 11 per cent stronger lower limb strength than those with the lowest nitrate intake.
