01 Give Hunger Both Barrels

If you’re hunting for afternoon energy, this rustic bite will recharge you – and spare you food-truck queues

- BY KIRAN JETHWA, ADVENTURER AND STAR OF C4’S THE FEARLESS CHEF

THE SHOOTER SANDWICH INGREDIENTS SERVES 4 • IRISH SODA BREAD ROLLS, 4 • JAR OF PESTO • TURKEY LEG, SMALL • A RED PEPPER • PARMA HAM, 100G, SLICED • MANCHEGO CHEESE, 200G Stay fired up for action (or indeed, a lengthy commute) with a modern take on quintessential outdoorsman’s fodder. Traditionally eaten by those hunting their supper, this shooter has a nutritional range that will keep you sharp, while forgoing the fanfare of your local sandwich chain. The key, of course, is a well-aimed hit of carbohydrates. “Soda bread is easier to break down because it doesn’t contain yeast, so it’s a sensible choice when you’re short on time,” explains Lambert. Perfect for the man navigating the (urban) wilderness. 01 To assemble, cut the lids off the bread rolls, then hollow out the centres and spread with pesto. Season the turkey leg and rub it with oil, then roast in an oven at 175°C until cooked (typically it should take about two hours). Turkey and parma ham provide you with a double shot of hungerbusting protein, helping you retain laser focus when food sources are few and far between – or a heavy workload is keeping you confined to your desk all afternoon. 02 While the turkey cooks, slice and deseed the pepper, then grill until it is ‘camp fire’ charred. Load up by layering the turkey, ham, peppers and manchego in the hollow. The Spanish queso is the hot shot here. “Manchego is high in protein, plus vits A, D and E, all of which are fundamental to energy release,” says Lambert.

03 Finally, replace the bread ‘lid’ and cover with clingfilm. Place your shooter in the fridge overnight under a heavy pot, to compress it into a portable package ready for tomorrow’s foray.
