BEER- SOAKED CRAYFISH & DILL
SERVES 4 • Wheat beer, 2 pints • Water, 500ml • Fennel seeds, 1tbsp • Black peppercorns, 1tbsp • Sea salt to taste • Live crayfish, 2kg • Dill, handful, chopped METHOD Pour the beer and water into a pan, add the fennel seeds (for a top-up of calcium), peppercorns and salt, and bring to the boil. Let it simmer for 10 minutes, then add the crayfish for a further three. Now chuck in the dill, which studies show has anti-cancer properties, and simmer for two minutes more. Drain and serve immediately with a light salad and a glass of the wheat beer.
