INGREDIENT­S

SIRLOIN STEAK • PORTOBELLO MUSHROOM • STILTON, 1TBSP • 8IN BRIOCHE ROLL • TRUFFLE MAYO, 1TSP • ROCKET, HANDFUL • PROVOLONE, 1TBSP • ONION CHUTNEY, 1TBSP • PICKLED CHILLI, 1TSP •

METHOD

1/ Stick a pan on high heat with a splash of oil. Trim the fat from your protein-rich steak and season well. Sear it for 20 seconds on each side, then let it cook until pink. 2/ Slice the mushroom – it’s rich in potassium to support muscle function – and fry in the meat juice for about three minutes. Add grated stilton, then take it off the heat. 3/ Halve your brioche sub roll and toast until golden. Add a layer of truffle mayo and top with fresh rocket. Slice the steak and arrange on top before adding the mushroom mix, provolone, chutney and pickled chilli. With thanks to Sub Cult
