TOMATO • CORIANDER LEAVES • LIME, ½, JUICED • AN AVOCADO • SOURDOUGH, 3 SLICES • SPINACH, HANDFUL • CHICKEN BREAST, 180G • CHIPOTLE PASTE, 2TSP •
METHOD
1/ Start by making the salsa: finely slice the tomato and mix with torn coriander leaves and a squeeze of lime. The vitamin C in tomatoes and citrus has been shown to inhibit the production of cortisol, helping to combat end-of-week adrenal fatigue. 2/ Slice, de-pit and crush the avocado, which is packed full of essential fatty acids to calm the effects of mental and physical stress. Spread half of it on a slice of bread. 3/ Tear up your magnesiumrich spinach leaves and layer them over the avo slice with salsa, chipotle and
chicken. Avo-up the next slice of bread and repeat. Pop the last slice on top and dig in
