V is for Veganish
A record 150,000 Brits took part in Veganuary this year. But while meat substitutes have flourished (see page 84), what of eggs? Try this alternative: combine 65g of chickpea flour, a pinch of garlic powder, a tablespoon of nutritional yeast and a pinch of bicarbonate of soda. Whisk in 100ml water, then combine with sautéed veg and spices and fry in batches, for 15g of protein per “omelette”. Serve alongside rashers of tempeh.
