A record 150,000 Brits took part in Ve­gan­uary this year. But while meat sub­sti­tutes have flour­ished (see page 84), what of eggs? Try this al­ter­na­tive: com­bine 65g of chick­pea flour, a pinch of gar­lic pow­der, a ta­ble­spoon of nu­tri­tional yeast and a pinch of bi­car­bon­ate of soda. Whisk in 100ml water, then com­bine with sautéed veg and spices and fry in batches, for 15g of pro­tein per “omelette”. Serve along­side rash­ers of tem­peh.
