In­door-reared pigs are seden­tary, which can make sausages made from their meat fatty and bland. You de­serve bet­ter. “Wild boar is like a cross be­tween beef and pork,” says Waugh. But en­sure you get the real thing: “De­spite its name, not all wild boar is ac­tu­ally wild, so ask.”

What’s in it for me?

As well as a stronger, nut­tier flavour, boar has a more var­ied nu­tri­ent pro­file as a re­sult of its diet of for­aged foods.
