The Ultimate Early-hours Toastie

Sourdough bread, 2 slices Mature cheddar, red cheddar and Parmesan, grated Worcestershire sauce
FOR THE BUTTER
Marmite, 1tsp Organic butter, 3tbsp Squeeze of lemon Neglecting to eat before bed is a rookie’s error, but an elephant-leg pitta will only add to your morning remorse. Consider this a healthy, happy medium.
01/ Make the Marmite butter ahead of time by thouroughly mixing the ingredients. The spread is rich in energy-increasing thiamin, niacin and vitamin B12 – all of which are depleted by alcohol, says Travers. Spread on both sides of the sourdough; it’s easier on your stomach than your regular loaf. 02/ Still with us? Fill the inside of your sandwich with the cheese, then liberally season with Worcestershire sauce for a double dose of those B vitamins. Fry the sandwich until both sides are golden, then remove and scatter extra cheese into the pan. 03/ When the cheese starts to bubble, lay the toastie on top to give it a mouth-watering crust. If you’ve really overdone it, top up on electrolytes with a pinch of sea salt – and try to force down a pint of water before you turn in.
