While car­nivory and ke­to­gen­ics may be mak­ing health head­lines, ve­g­an­ism is tak­ing root ev­ery­where. Ve­gan­uary par­tic­i­pants rose by 164,700 be­tween 2014 and 2018, with peo­ple for­go­ing meat and dairy for rea­sons en­vi­ron­men­tal (they ac­count for 60% of agri­cul­ture’s gas emis­sions), eco­nomic (veg costs less per pound) and eth­i­cal: Wework, which pro­vides 472 workspaces glob­ally, has gone en­tirely meat-free. “It’s rapidly be­com­ing main­stream,” says Wil­liams. Thanks to the lat­est plant-based burg­ers, it’s not such an un­ap­petis­ing prospect, ei­ther.
