This couldn’t be speedier to prep when you’re in a rush – whether you’re between meetings or returning from a lunchtime workout. Rip open the top of your pack of quinoa and microwave for two minutes.

When it’s ready, pour half of the pack onto your plate (the other half can be used tomorrow). Then, tear up your chicken and spinach and throw them over the top. Your meal is almost complete.

As a finishing touch, sprinkle the nutrient-rich pomegranat­e seeds (or a handful of blueberrie­s) on top of your salad and squeeze over the juice of half a lime for an extra kick. Now, tuck in and enjoy.
