Slice your potatoes and microwave them in a dish half-filled with water for 10 minutes. Slice your onions and pepper and fry in a pre-heated pan, greased with Frylight spray, until the onions are golden.

Whisk your eggs and season with salt and pepper, before pouring the mixture into the pan with your onions, pepper, potato and some spinach. Ensure the eggs cover all the vegetables and place the pan back on the heat.

Add an optional handful of grated cheddar and cook your omelette until it’s golden brown on the bottom and your desired texture on top. Place a plate over the pan to flip your omelette onto it. Quick, tasty and good for you.
