Hunt down some Fassone beef (available in select butchers and larger branches of Tesco and Waitrose), which is proven to keep your cholesterol levels in check. A rogue gene gives the Piedmontese cattle a condition called
“double-muscling”, which makes their meat lower in cholesterol and fat than salmon or chicken, while still packing the fatty acids of grass-fed beef. It cooks like a marbled, juicy rib-eye, too, and comes in at under 500kcal when served with baked sweet potato chips.
