FIBRE-BOOSTING FISH TACOS

Avocado oil, 1L Sweetcorn, a tin A tomato, diced Coriander, 2tbsp, chopped
A red chilli, diced Haddock fillets, 2 Vegetable oil, 15ml Paprika, 2tsp Panko, 40g
Taco shells, 4
METHOD
For the salsa, put the corn, tomato, chilli and coriander in a bowl and stir; set to one side. Preheat your fryer to 190°C. Cut each haddock fillet into four strips and marinate them in a bowl with oil and paprika for 10 minutes. Dip each strip in some flour, then whisked eggs, then panko breadcrumbs. Fry for five minutes until brown. Drain. Put the fish in the taco shells and add the salsa.
