FIBRE-BOOSTING FISH TACOS

Avocado oil, 1L Sweetcorn, a tin A tomato, diced Coriander, 2tbsp, chopped

A red chilli, diced Haddock fillets, 2 Vegetable oil, 15ml Paprika, 2tsp Panko, 40g

Taco shells, 4

METHOD

For the salsa, put the corn, tomato, chilli and coriander in a bowl and stir; set to one side. Preheat your fryer to 190°C. Cut each haddock fillet into four strips and marinate them in a bowl with oil and paprika for 10 minutes. Dip each strip in some flour, then whisked eggs, then panko breadcrumb­s. Fry for five minutes until brown. Drain. Put the fish in the taco shells and add the salsa.
