Use these expert tips to select and preserve your potatoes for optimal nutrition and enjoyment
AT THE SUPERMARKET
“Choose potatoes that are firm and smooth,” says registered dietitian Amanda Izquierdo. “Avoid any potatoes that are wrinkled, have soft areas or appear green.” The same goes for those with sprouts growing from their eyes. Give bagged potatoes a good squeeze: the freshest potatoes feel firm.
BACK AT HOME
Store the spuds in a bowl, or an open paper bag. Air circulation helps potatoes to stay fresh for longer, says Izquierdo. Better yet: “A cool, dark space is best, like a pantry or a cabinet. But don’t store them in a fridge – the starch in the potatoes will convert to sugar in cold temperatures,” she says.
