Upgrade Your Tupperware
Your favourite Pret baguette’s novelty will soon wear off. Try one of these quick, macrobalanced, envy-inducing lunches
01 The Meat
Cook 70g of rice noodles until al dente. While it boils, season a 1in-thick steak and grill on medium-high for three minutes each side, or until done to your liking. Add edamame beans, shredded red cabbage and a drizzle of satay sauce.
02 The Fish
Bulk cook filling wholegrains such as farro or buckwheat (they’ll keep in the freezer for a month) and use that as your base. Top with halved cherry tomatoes, charred cauliflower, black olives and a flaked salmon fillet. Dress in balsamic and toss through.
03 The Vegan
Use paper towels and a heavy weight to dry out a wedge of firm tofu for 15 minutes, then slice and fry until golden brown. Combine with a sachet of pre-cooked quinoa or wild rice, roasted broccoli, toasted almond flakes and sriracha.
