SERVES 2
2-4 shiitake mushrooms 4 smoked streaky bacon rashers 2 knobs of butter 2 tbsp extra virgin olive oil
2 eggs

METHOD
Fry the shiitake (great for immune health) and bacon on a medium heat without oil, turning when golden. Remove, then add a knob of butter and 1 tbsp olive oil. Turn heat down and gently crack an egg into the pan. Place the bacon and shiitake around the egg, cover and cook gently until the rim around the yolk is just cooked but still runny. Cook the udon and dashi as per instructions, then add the frying pan’s contents on top to serve.
