PAN-ROASTED MUSHROOMS

In a pan, heat 1 tbsp olive oil over a medium heat. Add 225g thickly sliced mixed mushrooms. Season with salt and pepper and cook for 2 to 4 mins. Add ½ a chopped shallot, ½ a chopped garlic clove, ½ tbsp thyme and 1 tbsp butter. Cook until tender, 2 to 4 mins. Put the mushrooms on a plate. Repeat the process 3 times. Before serving, add 1 tbsp butter to the pan, add the mushrooms and warm gently. Feeds 6. Nutrition per serving: 218 calories, 6g protein, 10g carbs (2g fibre), 19g fat
