STALK STEAK WITH BROCCOLI COUSCOUS

• 1 head of calabrese

• 2 sheets of nori

• 2 tsp sesame oil

• 1 garlic clove, diced

• 1 red chilli, diced

METHOD

Remove the florets and shave to create couscous. Toast the nori at 180°C for 2 mins, then grind up with 5g sea salt. Cut the broccoli stalk in half and boil for 6 mins, until soft but with bite, then season with the nori salt. Gently heat the sesame oil, then add the garlic and chilli. Allow to soften, then add the couscous. Add water to loosen and plate up with the stalk steak on top.
