PURPLE SPROUT SALAD

200g purple sprouts, shaved •
Handful of dry-roasted walnuts •
1 apple, thinly sliced • Blue cheese, crumbled, to taste •
2 tbsp olive oil
METHOD
Purple sprouts lose their colour when cooked, so this recipe preserves their healthy antioxidants by keeping them raw. Shave the sprouts into a salad bowl using a mandoline, then add the walnuts and apple. Make a dressing using the blue cheese (as much as you can handle), olive oil, salt and pepper. Toss it through the salad to finish.
