UPGRADE YOUR CHIPS
AVOCADO FRIES
Cut 2 not-quite-ripe avocados into 1cm-thick wedges. Working with a few wedges at a time, coat them in 130g of seasoned flour, 2 whisked eggs and 130g of panko breadcrumbs. Bake at 180°C for 20 mins, flipping halfway, on a well-sprayed baking tray (ideally fitted with a rack) until they’re golden brown.
GREEN BEAN FRIES
Trim 225g of green beans. Working with a few beans at a time, coat them in 130g of seasoned flour, 2 whisked eggs and 130g of panko. As before, bake them at 180°C for 20 mins, turning them over on a well-sprayed baking tray (use the rack again), until they’re golden brown.
SWEET POTATO FRIES
Cut 1 medium sweet potato into long 1/2cm-thick strips. Bake at 200°C for 15 to 20 mins, depending on whether you like a softer or crispier fry, on a well-sprayed baking tray, flipping halfway through.
