In­gre­di­ents (Makes 30-40 bis­cuits)

For the dough: ❋ 125g but­ter ❋ 100g light brown sugar ❋ 125ml golden syrup ❋ 1 egg yolk ❋ 375g plain flour, plus ex­tra

for dust­ing ❋ 1tsp bi­car­bon­ate of soda ❋ 2tsp ground gin­ger ❋ 1tsp ground cin­na­mon ❋ 1 pinch ground cloves ❋ ¼tsp grated nut­meg

For the ic­ing: ❋ 250g ic­ing sugar ❋ 1tsp lemon juice ❋ 1 egg white, lightly beaten

To dec­o­rate: ❋ Ed­i­ble coloured baubles

1For the dough: heat the oven to 180°C (160° fan) gas 4. Line 3 large bak­ing trays with non-stick bak­ing pa­per. Beat to­gether the but­ter, sugar and golden syrup in a mix­ing bowl un­til pale and creamy. Add the egg yolk and beat un­til just com­bined. Sift in the flour, bi­car­bon­ate of soda and spices and stir to com­bine. Turn onto a lightly floured sur face and gen­tly knead un­til smooth. Roll out the dough on a lightly floured sur face, about 3mm thick. Use a 5cm star cut­ter to cut out shapes from the dough. Place on the bak­ing trays. Bake for 10-12min un­til lightly golden. Cool on the trays. For the ic­ing: sift the ic­ing sugar into a bowl. Beat in the lemon juice and just enough egg white to make a smooth thick ic­ing. Put into a pip­ing bag and pipe on the bis­cuits, as in the photo. At­tach baubles to the ic­ing and leave to set.
