Ingredients (Makes 30-40 biscuits)
For the dough: ❋ 125g butter ❋ 100g light brown sugar ❋ 125ml golden syrup ❋ 1 egg yolk ❋ 375g plain flour, plus extra
for dusting ❋ 1tsp bicarbonate of soda ❋ 2tsp ground ginger ❋ 1tsp ground cinnamon ❋ 1 pinch ground cloves ❋ ¼tsp grated nutmeg
For the icing: ❋ 250g icing sugar ❋ 1tsp lemon juice ❋ 1 egg white, lightly beaten
To decorate: ❋ Edible coloured baubles
1For the dough: heat the oven to 180°C (160° fan) gas 4. Line 3 large baking trays with non-stick baking paper. Beat together the butter, sugar and golden syrup in a mixing bowl until pale and creamy. Add the egg yolk and beat until just combined. Sift in the flour, bicarbonate of soda and spices and stir to combine. Turn onto a lightly floured sur face and gently knead until smooth. Roll out the dough on a lightly floured sur face, about 3mm thick. Use a 5cm star cutter to cut out shapes from the dough. Place on the baking trays. Bake for 10-12min until lightly golden. Cool on the trays. For the icing: sift the icing sugar into a bowl. Beat in the lemon juice and just enough egg white to make a smooth thick icing. Put into a piping bag and pipe on the biscuits, as in the photo. Attach baubles to the icing and leave to set.
