Meringue Christ­mas Trees

In­gre­di­ents (Makes 12-16) ❋ 4 large egg whites ❋ Few drops vanilla ex­tract ❋ 1 pinch salt ❋ 250g caster sugar 1 Heat the oven to its low­est set­ting. Line 2 large bak­ing trays with non-stick bak­ing pa­per. 2 Whisk the egg whites, vanilla and salt with an elec­tric whisk un­til be­gin­ning to form peaks. Grad­u­ally whisk in the caster sugar un­til stiff, but not dry. 3 Put the meringue into a pip­ing bag and pipe Christ­mas tree shapes on the bak­ing trays. 4 Bake for about 2 hours, un­til the meringues sound crisp when tapped un­derneath. Turn the oven off and leave to cool in the oven for a fur­ther 1 hour. Care­fully peel away the pa­per and leave to cool com­pletely.
