Peachy Parma Ham & Goat’s Cheese Salad

In­gre­di­ents (Makes 2)

◆ 2 large hand­fuls mixed salad leaves

◆ 2 ripe peaches or nec­tarines, pit­ted and sliced

◆ 100g goat’s cheese, sliced

◆ 6 slices Parma Ham

◆ 1 tbsp lemon juice

◆ 2 tbsp olive oil

◆ 1 tsp Di­jon mus­tard

◆ 60g pome­gran­ate seeds

◆ Salt and freshly ground black pep­per Share the salad leaves be­tween 2 ser ving places. Place the peach or nec­tarine slices and goat’s cheese on top, then ar­range 3 slices of Parma Ham on each plate. Make the dress­ing by mix­ing to­gether the lemon juice, olive oil and mus­tard with a pinch of salt and pep­per. Spoon the dress­ing over the sal­ads and sprin­kle the pome­gran­ate seeds on top.

Ser ve at once.

Cook’s tip: Pome­gran­ate seeds are avail­able prepacked in most su­per­mar­kets these days – or just buy a pome­gran­ate.
