Peachy Parma Ham & Goat’s Cheese Salad
Ingredients (Makes 2)
◆ 2 large handfuls mixed salad leaves
◆ 2 ripe peaches or nectarines, pitted and sliced
◆ 100g goat’s cheese, sliced
◆ 6 slices Parma Ham
◆ 1 tbsp lemon juice
◆ 2 tbsp olive oil
◆ 1 tsp Dijon mustard
◆ 60g pomegranate seeds
◆ Salt and freshly ground black pepper Share the salad leaves between 2 ser ving places. Place the peach or nectarine slices and goat’s cheese on top, then arrange 3 slices of Parma Ham on each plate. Make the dressing by mixing together the lemon juice, olive oil and mustard with a pinch of salt and pepper. Spoon the dressing over the salads and sprinkle the pomegranate seeds on top.
Ser ve at once.
Cook’s tip: Pomegranate seeds are available prepacked in most supermarkets these days – or just buy a pomegranate.
