Plum Cheese­cake Rice Cakes

In­gre­di­ents (Makes 2)

3 plums, pit­ted and sliced 2 tsp honey

1 orange, fine shreds of zest and juice

80g low fat soft cheese

2tbsp 0% fat Greek yo­ghurt 2tsp caster sugar

¼ tsp vanilla ex­tract

2 rice cakes

Cin­na­mon or nut­meg, to serve

Put the plums, honey, orange zest and orange juice into a small saucepan with a lit­tle wa­ter and sim­mer for 4-5min, un­til ten­der. Cool.

Mix to­gether the soft cheese, yo­ghur t, sugar and vanilla ex­tract and spread thickly over the rice cakes.

Ser ve with the cooled plums and sprin­kle with a lit­tle ground cin­na­mon or grated nut­meg.
