◆ Fino Sherry is a dr y white wine, ranging from bright straw yellow to pale gold in colour. Light, dr y and delicate on the palate, Fino Sherry leaves a pleasant, fresh after taste of almonds. Fino wine also has the extraordin­ar y ability to stimulate your taste buds, so it’s an ideal aperitif. It adapts per fectly to a diverse range of salty and intense flavours, and therefore goes well with all types of tapas, especially olives, nuts and Iberian cured ham, as well as cold soups and seafood. Ser ve chilled in a white wine glass.

◆ Cream Sherry is a semisweet wine, which ranges from chestnut brown to dark mahogany in colour. A glass of Cream is full bodied and velvety in the mouth and of fers a well-balanced sweetness – seductivel­y elegant with a lingering after taste. For the per fect ser ve, pour Cream Sherry over ice in a tumbler and finish with a slice of orange; a wonder ful aperitif which combines the complexity of Sherry with delicious citrus notes. Pair with fruit (melon, orange) pastries or icecream or with savour y food, lean towards rich pâtés and blue cheeses.

◆ Although Pedro Ximénez is probably the sweetest wine in the world, it remains fresh and harmonious on the palate. A dark, ebony coloured wine that’s delightful­ly syrupy in the mouth, when tasting you can expect notes of dried fruits such as raisins, figs and dates, accompanie­d by the aromas of honey, coffee and cocoa. Wonderful ser ved slightly chilled, Pedro Ximénez is a desser t in itself, though it works exceptiona­lly well when ending a meal with bitter chocolate desser ts, alongside ice-creams as well as strong blue cheeses like Roquefor t.
