Chicken Tikka
INGREDIENTS
(Serves 4)
◆ 500g lean minced chicken
◆ 1 small onion, finely chopped
◆ 65g dry white breadcrumbs
◆ 1tbsp tikka spice mix or mild curry powder
◆ 1tsp salt
◆ 6tbsp mango chutney
◆ 1tsp black onion seeds, optional
◆ 2tsp vegetable oil
◆ 8 mini naan, warmed
◆ Shredded lettuce and sliced cucumber
◆ Cucumber raita to serve
– see Tip 1 Put the chicken mince in a bowl. Add onion, breadcrumbs, spice mix, salt, 2tbsp mango chutney and onion seeds if using. Bring together with your hands and divide into 4 equal portions. Form each into a burger shape about 10cm diameter. Put on a plate lined with baking parchment, cover and chill for 30min or until ready to cook.
2 When ready to cook, brush a non-stick griddle pan lightly with some of the oil. Lay the burgers in the pan, reduce heat to medium and cook for 7-8min. Brush tops with oil, turn over and cook for a further 7-8min until thoroughly cooked.
3 To serve, top 4 naans with lettuce and cucumber. Spoon over the remaining mango chutney and serve sandwiched with another naan, with raita to accompany. Serve immediately.
TIP: To make raita, finely chop ¼ cucumber and ½ small red onion. Mix with 150g pot whole milk natural yogurt and 1tbsp mint jelly. Season to taste. Cover and chill until ready to serve.
