BENGAL BLACK EYE BEANS WITH VEGETABLE PILAU
INGREDIENTS (Serves 4)
◆ 2 x 400g can black eye beans
◆ 2 tbsp rapeseed oil
◆ 3 onions finely chopped
◆ 3 cloves garlic, diced
◆ 2 chillies, diced
◆ 2 cm fresh ginger peeled and grated
◆ 1 green pepper, chopped
◆ 2 tsp garam masala
◆ 2 tsp turmeric
◆ juice of 1 lemon
◆ 800ml vegetable stock
◆ 1 cinnamon stick
◆ 3 cloves
For the rice
◆ 3 tbsp fresh coriander leaves
◆ 200g long grain brown rice
◆ 1 tsp cumin seeds
◆ ½ cauliflower, cut into florets
◆ 2 carrots, diced
1 Saute two onions, half the garlic, 1 chilli, half the ginger and the pepper in half the oil for 10mins until soft.
2 Add the drained beans, garam masala, 1 tsp turmeric, lemon juice, 250ml vegetable stock, cinnamon stick and cloves and simmer for 15mins.
3 Mix the remaining ginger, chilli, turmeric, onion, garlic and diced coriander in the remaining oil.
4 Cook for 2mins to soften the onion then stir in the rice. When the grains are slightly opaque, add the cumin seeds and vegetables.
5 Pour in the remaining stock and simmer for 25mins until the rice is tender.
