Smoked Salmon Mousse Blinis

INGREDIENT­S ◆ 213g can red salmon, drained ◆ 50g low fat soft cheese ◆ 2tsp chopped fresh dill, plus sprigs to garnish ◆ 12 cocktail blinis (tiny pancakes) ◆ 80g smoked salmon, sliced into thin strips ◆ Freshly-ground black pepper 1 Remove the skin and bones from the canned salmon, mash it with a fork, then stir in the soft cheese and chopped dill. 2 Share the salmon mousse between the blinis, then garnish with smoked salmon and dill sprigs. Serve, sprinkled with black pepper.
