ROSEMARY PARMENTIER POTATOES

Preparatio­n time: 10min Cooking time: 45min ◆ 3tbsp vegetable oil ◆ 700g potatoes, peeled and cut into cubes ◆ Sprig of rosemary

Preheat the oven to 200°C, Fan Oven 180°C, Gas Mark 6. Pour the vegetable oil into a roasting pan and heat for 3-4min.

Tip the potatoes into the oil and toss to coat. Roast for 45min, turning twice, and snipping the rosemary over the top 5min before the end of cooking time. Cook’s tip: Cook at the same time as the turkey – though put the potatoes in 15min later, as you need to rest the turkey for 10min before serving.
