COLOURFUL COOKIES

INGREDIENT­S (Makes 24) For the cookie dough:

◆ 250g unsalted butter, softened

◆ 350g caster sugar

◆ 2 large eggs

◆ 2tsp vanilla extract

◆ 300g flour, sifted, plus extra for dusting

◆ ¼tsp salt

◆ 1tsp bicarbonat­e of soda

◆ 100g cocoa powder

◆ 2tbsp milk

To decorate:

◆ 150g Smarties

◆ 300g assorted chocolate chunks, milk, white and dark chocolate

◆ 75g Jelly Tots, or similar sweets

Method: 1 For the cookie dough: Cream together the butter, sugar, eggs, and vanilla extract in a large mixing bowl until pale and fluffy. Stir in the flour, salt and bicarbonat­e of soda, mixing well until a cookie dough comes together. Divide the dough between two bowls. Stir the cocoa powder and milk into one bowl to make a chocolate dough. Wrap both doughs in clingfilm and chill for 30min. 2 After chilling, preheat the oven to 180°C (160° fan) gas 4. Grease and line two large baking trays with greaseproo­f paper. Roll out the doughs on a lightly floured sur face to 0.75cm thickness. Cut out rounds and arrange between the trays, spaced apart. Press an assortment of Smarties, chocolate chunks, and Jelly Tots into the cookie dough rounds. 3 Bake for 12-16min until set. Remove the trays to wire racks to cool before peeling the cookies away from the paper and serving.
