Piece Of Turf Cake

INGREDIENT­S (Serves 12-16) ◆ 300g 72% extra dark chocolate, broken into pieces ◆ 250g unsalted butter ◆ 200g light soft brown sugar ◆ 4 medium eggs, beaten ◆ 200g plain flour ◆ 10g baking powder ◆ 150g dark choc chips ◆ 300g vanilla frosting ◆ Green food colour gel or paste ◆ Assorted football cake decoration­s 1 Preheat the oven to 180°C (160°C fan oven, Gas 4). Grease and line a deep 20cm square cake tin. Put the chocolate, butter and sugar in a saucepan, and melt over a low heat, stirring occasional­ly. Cool for 10min. 2 Mix in the eggs to make a glossy batter. Sift the flour and baking powder on top, add the chips and mix together until well blended. Pour into the tin and bake for 1hr to 1hr 10min until risen, firm and crusty on top. Leave to cool in the tin, then remove and discard lining paper. 3 To decorate, colour the frosting with sufficient green colour to make a bright icing. Turn the cake upside down on a board and spread with a thin layer of icing. Place a multi-opening (or grass-tip) nozzle in a piping bag and pipe tufts of green icing to resemble grass all over the top of the cake. Decorate and ser ve.
