In the final couple of days before the big day itself, with the careful organisati­on you have done, you should be more than ready to rock ’n’ roll – but do keep that precious notebook handy. There’s a lot going on, and you may notice that you are nearly out of coffee and lose that thought along the way… Write it all down, and nip out to the local shop for anything urgent. Remember the tinfoil! The next list is the cooking breakdown. Head to the freezer, check defrosting and cooking times and add them to a timeline. If anything can be pre- or par-cooked and kept in the fridge, then fab. And don’t forget Santa’s little helpers! Set family members to peeling, slicing and whisking with the promise of a mince pie or part of a chocolate reindeer! There may be quite a bit of washing-up needing done so offer up more of the chocolate reindeer for kitchen duties as you go along. You can have a quiet cuppa and timeline check while they splash about. At this time of year, anything in your kitchen that has a timer is your friend. Set it going and walk away until you hear that ping!
