Spiced Glazed Roasted Root Veg

INGREDIENTS (Serves 6)
◆ 750g small parsnips, scrubbed
and halved ◆ 500g small carrots, scrubbed
and halved ◆ 4 small beetroot, peeled and
quartered ◆ 8 small red onions, halved ◆ 3tbsp olive oil ◆ 3 star anise ◆ 2tsp cumin seeds ◆ 1tbsp clear honey ◆ Salt and freshly ground black
pepper ◆ Fresh thyme sprigs, to garnish Aromatic and delicious – enjoy this delicious twist on regular roast veg. 1 Preheat the oven to 200°C, fan oven 180°C, Gas Mark 6.
2 Put the parsnips, carrots, beetroot, red onions and olive oil into a roasting tin and toss to coat.
3 Roast for 20min, then add the star anise and cumin seeds. Roast for a further 10-15min, stirring in the honey for the final 5min of cooking time. Season, sprinkle on thyme and serve.
COOK’S TIP:
Make sure the vegetables are tender before you add the honey.
