LIGHT MEAL, SOUP & SALAD ONE-LINERS

● Cod and chips – a fillet off cod, and some oven potato wedges. ● Jacket potato or sweet potato with salmon flakes mixed with thick yogurt and a little avocado, topped with chilli. ● Take one of those plastic sachets of cooked quinoa – mix half of one with cooked chicken and leaves, basil, tomatoes and spring onions – delicious hot or cold. ● Any of the Anytime recipes with a jacket potato, or some Sweet Potato Wedges. ● Leftover cooked buckwheat pasta mixed with spring onions, smoked mackerel, cos lettuce and baby cherry tomatoes.
