Sunset Brioche Buns With Slaw

INGREDIENT­S (Serves 4)

◆ 4 brioche buns ◆ 25g low fat spread ◆ 1 small head red chicory,

separated into leaves ◆ 150g sliced smoked ham ◆ 150g red Leicester

cheese, sliced ◆ 8 baby yellow tomatoes,

sliced ◆ 3tbsp chilli jam

1 First make the slaw. In a bowl, combine the carrot, spring onions, radishes and red cabbage. Mix the olive oil, lemon juice, honey and mustard together and pour over the vegetables. Gently toss together. Cover and set aside. 2 Cut the buns in half widthways and coat with spread. Layer the radicchio leaves, ham, cheese and tomato slices on the bun bases. Drizzle over the chilli jam. Add the brioche bun tops and secure with a cocktail stick, if wished. Ser ve with the slaw.

For the Slaw: ◆ 1 large carrot, peeled and

coarsely grated ◆ 4 spring onions, finely sliced ◆ 6 radishes, sliced ◆ 100g red cabbage, finely sliced ◆ 1tbsp olive oil ◆ 1tbsp lemon juice ◆ 1tsp clear honey ◆ 2tsp wholegrain mustard
