Chicken Tikka Stuffed Baguette

INGREDIENT­S (Serves 3-4) ◆ 1 baguette, about 55cm

long ◆ 150ml Greek yogurt ◆ 100g mango chutney ◆ 2x160g packs chicken

tikka breast slices ◆ 1 small mango, peeled,

stoned and chopped ◆ 6 spring onions chopped ◆ 4tbsp chopped fresh

coriander

1 Slice the baguette into 3 or 4 lengthways, leaving the back edge still attached. Gently press them open and pull out the bread from the centre of each side to slightly hollow out the loaf. 2 Mix together the Greek yogurt and mango chutney. Spread over the cut sur faces of bread. Layer the chicken and chopped mango into the hollowed base, sprinkling with spring onions and coriander as you assemble the filling. 3 Close the bread tops and tightly roll each portion in baking parchment, pressing down firmly to enclose the filling. Secure with string or raffia. Chill until ready to serve.
